It’s funny how the chocolate industry managed to make National Chocolate Day right before Halloween when all the candy is out and on sale!!! SNEAKY!!! But…I’ll play along. 😉

Chocolate making is an art. And that art is transformed into many different types of chocolate.
Milk Chocolate: Made with milk and with a minimum of 10% cocoa solids in the United States – and a range of 20-25% in most of Europe. (Now I know why I love European chocolate so much!)
Dark Chocolate: Known as “Plain” or “Black” chocolate. It’s made with much higher concentrations of cocoa solids ranging from 70-99%. It’s also made with cocoa butter – not milk. Dark chocolate is considered semisweet, while Extra Dark is considered bittersweet.
White Chocolate: Is made with sugar, milk, and cocoa butter – and no cocoa solids. It has NO chocolate solids that are found in all other types of chocolate.
Cocoa Powder: Used for baking and drinking in milk.
Organic Chocolate: Made with certified organic ingredients.
Raw Chocolate: Is chocolate that has not be processed, heated, or mixed with other ingredients.
Unsweetened Chocolate: Is pure chocolate liquor mixed with a fat substance to make a solid.
Bittersweet Chocolate: Is unsweetened chocolate mixed with a little bit of sugar, cocoa butter, vanilla, and a fat substance.
Semisweet Chocolate: Is made with dark chocolate, no milk, and half as much sugar as cocoa. It’s mostly used for cooking and baking.
Compound Chocolate: Is typically the coating on candy bars. It’s made from cocoa and fat. Since it has a lower cocoa presence, in many countries it is “illegal” to call it chocolate!
Modeling Chocolate: Is a chocolate and syrup mixture. It’s mainly used by upscale bakeries and patisseries.
That’s A LOT of chocolate for us to enjoy!

Hmm, chocolate…. One of my guilty pleasures in life. Believe it or not, I hate chocolate ice cream and hot chocolate, but love chocolate milk. Weird right? But as far as chocolate candy goes: Crispy M&Ms (well, any M&Ms in general), Kit Kats, Snickers, and Reese’s peanut butter cups. Chocolate chip cookies and brownies. Gosh, Jacque, you’re making want to eat some brownies I made last night…
