For the carnivores who can’t get enough bacon in their life – NATIONAL BACON DAY brings reason to celebrate all things BACON!

The love of bacon has taken on a life of its own.  Bacon is no longer relegated to just a breakfast side.  Recipes from main dishes to desserts have been rigorously devoured by the bacon fandom.  But now, the love of bacon has been elevated to trinkets, home décor, bandages, and even into beauty products!

However, I want to bring it back to the yumminess that has created so many bacon-fanatics world-wide – FOOD!!!

I found some DELICIOUS recipes that I thought would be fun to share – and give us all a little bacon-infused inspiration.

This hearty Potato Bacon Casserole features tender hash browns and succulent bacon pieces. It is a perfect crowd pleaser for brunch or any meal.

Now, let’s take a step out of the traditional bacon box and make some “Bacon Jam”???  This sounds … uh, interesting.  Would you eat it?

Awesome savory condiment! Made and then put inside a fried egg sandwich. Yummy. I could eat right out of the jar but I will not to be that bad. Could see this in a grilled cheese, or sub in for sliced bacon in a BLT.

Another breakfast winner is called “Occupy Bacon”!  They’re a little nest of hash browns and an egg wrapped in bacon!  YUMMY!!!

WOW!  Talk about food that disappeared fast.  Before the meal was done I was being asked when I would fix this again.  This is a definite MUST have for my recipe collection.

This recipe has turned into a holiday tradition for me and my daughter. We now leave it out with the cookies every year for Santa. Surprisingly, even though he usually leaves a couple cookies behind, there’s never any “Sugar Bacon” left over.
